Spray liquid media evenly in bakery and food-production processes

Application: Spray liquid media evenly in bakery and food-production processes

In brief

In bakeries and industrial food-processing systems, liquid media are applied precisely to moulds, baking trays, conveyor surfaces or products. Typical tasks include thin application of release agents and pan oils, dosing edible oils and fats, and spraying suitable liquid glazes, cocoa butter, chocolate compounds or decorative media.

Spraying tasks in food production

In bakeries and industrial food-processing systems, liquid media are applied precisely to moulds, baking trays, conveyor surfaces or products. Typical tasks include thin application of release agents and pan oils, dosing edible oils and fats, and spraying suitable liquid glazes, cocoa butter, chocolate compounds or decorative media.

Krautzberger focuses on pumpable and sprayable liquids. Products containing chunks or media with particles that cannot pass through the intended nozzle are unsuitable for this process. Technical suitability and food-contact compliance must be checked for every medium and each component in contact with it.

Typical applications

  • Release agents on baking moulds, plates, strips and trays
  • Food oils and fats on products or process surfaces
  • pumpable chocolate, cocoa butter and liquid glazes
  • liquid decorative and dye media
  • targeted application of small quantities to products in cyclic production
  • continuous application on conveyor belts or conveyors

Uniformity, hygiene and temperature

Food media often vary strongly in viscosity with temperature. Fats, cocoa butter and chocolate can become viscous or solidify as the temperature falls. Processing temperature, hose length, tanks and any necessary temperature control must therefore be planned together.

At the same time, the material-bearing areas must be easily accessible and cleanable. Cross-contamination between different media should be avoided. Hygiene concept, cleaning procedures and release for direct food contact are the responsibility of the operator and must be coordinated with the materials used.

Decisive process parameters

  • reproducible dosing at varying conveyor speeds or cycle rates
  • uniform wetting without droplets, puddles or unnecessary spray mist
  • nozzle size and spray pattern matched to viscosity and application quantity
  • suitable materials and seals
  • Temperature control for viscous or solidifying media
  • fast disassembly, rinsing and cleaning
  • Component or product detection for a demand-oriented spray pulse

Hygienic design and safe media management

In food-production applications, all product-contact components must be included in the operator's hygiene concept. Materials, seals, lubricants, cleaning agents and disassembly procedures must be assessed for the specific installation. Krautzberger can adapt the spray and supply equipment, but this does not replace approval of the complete process under food legislation.

Dead spaces and areas that are difficult to access should be avoided wherever possible. Short material paths, accessible tanks and clearly defined flushing or cleaning sequences are useful for frequent product changes. With heated media, temperature distribution in the tank, hose and spray gun must also be considered.

  • Material and sealing compatibility
  • Accessibility for cleaning
  • Prevention of cross-contamination
  • Temperature guidance throughout the material path
  • Customer release for the food process

Krautzberger spraying technology and material supply

Depending on the process, manual spray guns, automatic spray guns, material pressure vessels, diaphragm pumps and material pressure regulators can be combined. In automated lines spray guns can be integrated into existing machines via brackets, lifting devices or axes.

A finely adjustable material supply helps to keep the quantity constant and limit the consumption of high-quality media. For temperature-dependent materials, the entire supply concept must be adapted to the necessary processing temperature. Whether a concrete execution is suitable for direct food contact will be tested on the basis of the medium and the customer's hygiene requirements.

From the single station to the production line

For small batches or experiments, the job can be done manually. In industrial lines spray gun, product detection and transport speed are linked together. This means that material is only released if the shape, sheet or product has reached the intended position.

In the case of multiple nozzles or wide conveyor belts, the application quantity must be uniform over the entire width. Different product formats can be processed via stored spray times or adjustable apparatus positions.

  • manual application for samples and small batches
  • Automatic product detection
  • synchronisation with conveyor speed and cycle rate
  • Reproducible recipes for different products

Benefits for your production

  • even application with low media consumption
  • less attachment and cleaner forms
  • reproducible product appearance and dosing
  • Targeted spraying only with existing product
  • flexible integration into cyclic and continuous production lines
  • coordinated solution from spray gun and material supply

Tests with original medium and sample product

Oils, fats, glazes and release agents differ significantly in viscosity, temperature behaviour and wetting. In the Krautzberger technical test centre, original medium, shape or sample product can be tested. In doing so, conveyorability, spray pattern, application quantity, drop formation and cleanability are evaluated.

The food law release and hygienic validation are carried out by the operator together with the media supplier.
